Final Fantasy VI because you could switch out characters whenever you wanted. There's a total of 15 characters I think, and it's one of the only Final Fantasy games where you can actually train different builds of your characters. Too many easter eggs and sidequests to count. I also liked the way you couldn't get all of the items on one save file, which makes me actually choose carefully what I want. The Ragnarok sword or the Ragnarok rune?
It's also the only Final Fantasy game where you can beat the game without ever having to get any extra experience points. (Bosses give you no exp, and there's only one mandatory fight that gives you exp. That's not including the random battles against ninjas that you can't escape from.) In three parts, you have to carefully maneuver around enemies in order to not receive exp. And yes, a low-level run can be achieved without the invis-doom strategy.
This game also provides an extra challenge by weakening characters who level early. For example, if I were to level up to 99 at the beginning of the game, my characters would be 1/3 as strong if I leveled them at the end. It's due to the espers that give you bonus stats at level-up.
Unlike FFIV, rare items are actually achievable. Which means you don't have to encounter a random battle on a certain square and have a 1/600 chance of encountering a pink puff, or having a 1/300 chance of getting a darn Zeus Glove from a dragon. FFIV is the second best Final Fantasy game in my opinion, but it's so darn hard to get all of the items.
Most old-school RPG players will say FFVI is the best in the series, and other newer RPG gamers will probably tend to like FFVII or FFX. FFX's sphere grid seems like it can create versatile builds.
Final Fantasy Tactics Advance is the only game where you cannot max out your stats, so leveling absolutely perfectly is essential to getting the best characters. Leveling as certain classes affects your stats. It took me two weeks of research just to figure out how to get the perfect characters.
So I would have to say that Final Fantasy VI is my favorite Final Fantasy game.

FFVII, what is there to say? It had a great story line I Loved the Materia System, and it was 1 of the first multi-disc. games, the only down side are the grafics which first, aren't that bad and second, were great for when the game was made

I vote for FFVIII. It was the first one I played so it had the most impression on me. And gunblades are sexy. Although, I still don't why you can't blast someones head off with it from far away like a gun >_>
